Asian Glazed Salmon and Cauliflower

Ingredients
- 4 boneless fillets of salmon
- 2 cups (around 550 grams) of frozen cauliflower rice (or freshly ground cauliflower rice using a food processor)
- 4 tbsp of liquid aminos or soy sauce
- 2 tbsp of shallots, chopped finely
- 2 tbsp of sesame oil
Directions
- Make a marinade of the liquid aminos, shallots, and sesame oil and combine them all into a bowl.
- Soak the salmon fillets to the marinade and optionally refrigerate for at least an hour before cooking.
- Pop these into the oven and bake for 10-12 minutes.
- While the salmon cooks, heat and prepare the frozen cauliflower rice, according to package instructions.
- Serve the salmon over the cauliflower rice hot
