Asian Glazed Salmon and Cauliflower

Ingredients

  • 4 boneless fillets of salmon
  • 2 cups (around 550 grams) of frozen cauliflower rice (or freshly ground cauliflower rice using a food processor)
  • 4 tbsp of liquid aminos or soy sauce
  • 2 tbsp of shallots, chopped finely
  • 2 tbsp of sesame oil

Directions

  1. Make a marinade of the liquid aminos, shallots, and sesame oil and combine them all into a bowl.
  2. Soak the salmon fillets to the marinade and optionally refrigerate for at least an hour before cooking.
  3. Pop these into the oven and bake for 10-12 minutes.
  4. While the salmon cooks, heat and prepare the frozen cauliflower rice, according to package instructions.
  5. Serve the salmon over the cauliflower rice hot
