Walnut Encrusted Salmon

Ingredients

  • 0.5 cup walnuts
  • 2 tablespoons stevia
  • 0.5 tablespoon Dijon mustard
  • 0.25 teaspoon dill
  • 2 Salmon fillets (3 ounces each)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

  1. Pre-heat your oven to 350 degree F
  2. Add walnuts, mustard, stevia to food processor and process until your desired consistency is achieved
  3. Take a frying pan and place it over medium heat
  4. Add oil and let it heat up
  5. Add salmon and sear for 3 minutes
  6. Add walnut mix and coat well
  7. Transfer coated salmon to baking sheet, bake in oven for 8 minutes
  8. Serve and enjoy!
