Ingredients

  • 4 cups unsweetened coconut, shredded
  • 0.5 cup coconut milk
  • 0.25 cup sugar-free maple syrup
  • 0.25 teaspoon almond extract

Directions

  1. Blend coconut in your food processor until you have a nice texture.
  2. Add coconut milk and syrup; keep blending until you have a nice batter.
  3. Add more milk if the batter is a bit too crumbly.
  4. Transfer the mixture to the mixing bowl.
  5. Use your hand to form small balls.
  6. Line a baking tray with parchment paper and transfer the balls, flatten them lightly to form a cookie shape.
  7. Sprinkle coconut on top and chill for 2-3 hour until firm
  8. Enjoy!
