Ingredients
- 4 cups unsweetened coconut, shredded
- 0.5 cup coconut milk
- 0.25 cup sugar-free maple syrup
- 0.25 teaspoon almond extract
Directions
- Blend coconut in your food processor until you have a nice texture.
- Add coconut milk and syrup; keep blending until you have a nice batter.
- Add more milk if the batter is a bit too crumbly.
- Transfer the mixture to the mixing bowl.
- Use your hand to form small balls.
- Line a baking tray with parchment paper and transfer the balls, flatten them lightly to form a cookie shape.
- Sprinkle coconut on top and chill for 2-3 hour until firm
