Fancy Grilled Halloumi Bruschetta

Ingredients

  • 2 medium tomatoes, chopped
  • 2 packages of halloumi cheese (Cyprus grilling cheese), cut into 1 inch thick slices lengthwise
  • 2 tbsp of olive oil
  • 1 tbsp of chopped fresh basil leaves, chopped

Directions

  1. In a bowl, combine the tomatoes with the basil and 1 tbsp of olive oil.
  2. Heat the remaining tsp of olive oil in a grilling pan and add the halloumi cheese slices to grill for around 2 minutes on each side.
  3. Serve the halloumi slices with the tomato mixture on top, as if you are making a bruschetta
