Ingredients

  • 0.75 cup blanche almond flour
  • 0.25 cup golden flaxseed meal and heavy cream
  • 0.3 cup Erythritol
  • 1 teaspoon baking powder and vanilla extract
  • 2 tablespoons poppy seeds
  • 0.25 cup molted salted butter
  • 3 large whole eggs
  • Zest of 2 lemons
  • 3 tablespoons lemon juice
  • 25 drops liquid stevia

Directions

  1. Pre-heat your oven to a temperature of 350 degree Fahrenheit
  2. Take a mixing bowl and add poppy seeds, almond flour, Erythritol
  3. Add the Flaxseed meal as well and let it stir completely
  4. Add the melted butter
  5. Pour heavy cream alongside egg
  6. Mix everything well
  7. Add baking powder, vanilla, lemon juice, stevia and zest
  8. Mix everything to incorporate them well
  9. Pour the batter into cupcake molds and bake for 20 minutes until a brown texture is seen
  10. Cool the muffins on a cooling rack for 10 minutes and serve!
