Gripping Eggplant Parmesan

Ingredients

  • 1 medium eggplant
  • 0.5 teaspoon salt
  • 1 large egg
  • 1 cup almond flour
  • 1 cup parmesan cheese, grated
  • 2 teaspoon garlic powder
  • Salt and pepper to taste
  • 0.25 cup coconut oil

Directions

  1. Prepare eggplant by slicing it into thin slices
  2. Lay slices on a flat surface and blot with hand towel to remove excess water
  3. Season with salt and pepper
  4. Let it marinate for 30 minutes. Blot once more
  5. Add eggs to a medium bowl and whisk
  6. Add garlic powder, parmesan cheese, almond flour to a large bowl and season with salt and pepper, stir well
  7. Place a skillet over medium heat and add coconut oil
  8. Add eggplant slices to egg bowl and dredge them flour mix. Life out and add to hot oil
  9. Fry until both sides are golden
  10. Repeat until all eggplants are cooked. Enjoy!
