Ingredients

  • 12 cups of rommain lettuce, chopped
  • 0.33 cup of extra virgin olive oil
  • 0.33 cup of fresh grated parmesan cheese
  • 3 tablespoon of freshly squeezed lemon juice
  • 1.5 tablespoon of mayonnaise (Keto-Friendly)
  • 0.33 teaspoon of garlic powder
  • Freshly ground black pepper

Directions

  1. Take a pan and place it over medium low heat
  2. Add all of the ingredients and stir them until fully combined
  3. Cook for about 5-10 minutes, making sure that the lid is on
  4. Remove the lid and keep cooking until any excess liquid goes away
  5. Once the rice is soft and creamy, enjoy!
