Ingredients

  • 3 hard-boiled eggs, cooled
  • 2 tablepoons celery, diced
  • 3 tablespoon canned coconut milk
  • 1 tablesooon parsley, chopped
  • 1 teaspoon fresh lemon juice
  • Salt and pepper as needed
  • 1.5 cups romain lettuce, chopped

Directions

  1. Peel eggs and chop them coarsely, transfer to your salad bowl
  2. Add celery, coconut milk, parsley, lemon juice and season with salt and pepper according to your taste
  3. Sprinkle chopped romaine lettuce
  4. Serve and enjoy!
