Low- Carb Butternut Chicken

Ingredients

  • 0.5 pound Nitrate free bacon
  • 6 chicken thighs, boneless and skinless
  • 3 cups butternut squash, cubed
  • Extra virgin olive oil
  • Fresh chopped sage
  • Salt and pepper as needed

Directions

  1. Prepare your oven by pre-heating it to 425 degree F
  2. Take a large skillet and place it over medium-high heat, add bacon and fry until crispy
  3. Take a bacon and place it on the side, crumbled the bacon
  4. Add cubed butternut squash in the bacon grease and Saute, season with salt and pepper
  5. Once the squash is tender, remove skillet and transfer to plate
  6. Add coconut oil to the skillet and add chicken thigh, cook for 10 minutes
  7. Season with salt and pepper
  8. Remove skillet from stove and transfer to oven
  9. Bake for 12-15 minutes, top with crumbled bacon and sage
