Ingredients

  • 2 tablespoons ground flaxseeds
  • 2 tablespoons desiccated coconut
  • 1 teaspoon cinnamon
  • 4 ounces vegan cream cheese
  • 1 cup cashews, soaked
  • 0.5 cup frozen blueberries
  • 2 tablespoons coconut oil
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Liquid stevia

Directions

  1. Take a container and mix in the crust ingredients, mix well
  2. Flatten the mixture at the bottom to prepared the crust of your cheesecake
  3. Take a blender/ food processor and add the filling ingredients, blend until smooth
  4. Gently pour the batter on top of your crust and chill for 2 hours
  5. Serve and enjoy
