Simple Lamb Riblets And Mini Pesto

Ingredients

  • 1 cup parsley
  • 1 cup mint
  • 1.05 onions, peeled and chopped
  • 0.33 cup pistachios
  • 1 teaspoon lemon zest
  • 5 tablespoons avocado oil
  • Salt, to taste
  • 2 pounds lamb riblets
  • 5 garlic cloves, peeled and minced
  • Juice of 1 orange

Directions

  1. Add parsley, mint, 1 onion, pistachios, lemon zest, salt, and avocado oil to Food processor
  2. Rub lamb with mix
  3. Transfer to bowl and let it refrigerate for 1 hour
  4. Transfer lamb to baking dish
  5. Add garlic and ½ onion, drizzle orange juice
  6. Bake for 2 hours at 250-degree F
  7. Divide between plates and serve
  8. Enjoy!
