Ingredients
- 1 cup parsley
- 1 cup mint
- 1.05 onions, peeled and chopped
- 0.33 cup pistachios
- 1 teaspoon lemon zest
- 5 tablespoons avocado oil
- Salt, to taste
- 2 pounds lamb riblets
- 5 garlic cloves, peeled and minced
- Juice of 1 orange
Directions
- Add parsley, mint, 1 onion, pistachios, lemon zest, salt, and avocado oil to Food processor
- Rub lamb with mix
- Transfer to bowl and let it refrigerate for 1 hour
- Transfer lamb to baking dish
- Add garlic and ½ onion, drizzle orange juice
- Bake for 2 hours at 250-degree F
- Divide between plates and serve
