Zucchini Zoodles With Chicken and Basil

Ingredients

  • 2 chicken fillets, cubed
  • 2 tablespoons ghee
  • 1 pound tomatoes, diced
  • 0.5 cup basil, chopped
  • 0.25 cup coconut milk
  • 1 garlic clove, peeled, minced
  • 1 zucchini, shredded

Directions

  1. Saute cubed chicken in ghee until no longer pink
  2. Add tomatoes and season with salt
  3. Simmer and reduce liquid
  4. Prepare your zucchini Zoodles by shredding zucchini in food processor
  5. Ad basil, garlic, coconut milk to chicken and cook for a few minutes
  6. Add half of the zucchini Zoodles to a bowl and top with creamy tomato basil chicken
  7. Enjoy!
