- Saute cubed chicken in ghee until no longer pink
- Add tomatoes and season with salt
- Simmer and reduce liquid
- Prepare your zucchini Zoodles by shredding zucchini in food processor
- Ad basil, garlic, coconut milk to chicken and cook for a few minutes
- Add half of the zucchini Zoodles to a bowl and top with creamy tomato basil chicken
