  1. In a bowl, combine the flaxseed flour and parmesan cheese with the garlic salt and set aside.
  2. In another bowl, beat two eggs.
  3. Cut the chicken breasts into two thick stripes or bite-sized squares.
  4. Dip each chicken piece first into the egg and then to the dry mixture, making sure that everything is coated evenly.
  5. Grease a skillet with a bit of oil or butter and shallow dry for 3-4 minutes on each side until golden brown.
  6. Remove from the heat and serve on a dish with paper and a small bowl of marinara sauce
