Ingredients

  • 2 whole eggs
  • 2 cups almond flour
  • 2 tablespoons coconut oil, spray
  • 2 eggplant, peeled and cut thinly
  • Salt and pepper to taste

Directions

  1. Preheat your oven to 400 degrees Fahrenheit.
  2. Take a bowl and mix with salt and black pepper in it.
  3. Take another bowl and beat eggs until frothy.
  4. Dip the eggplant pieces into eggs.
  5. Then coat them with a flour mixture.
  6. Add another layer of flour and egg.
  7. Then, take a baking sheet and grease with coconut oil on top.
  8. Bake for about 15 minutes.
  9. Serve and enjoy!
