Ingredients
- 2 whole eggs
- 2 cups almond flour
- 2 tablespoons coconut oil, spray
- 2 eggplant, peeled and cut thinly
- Salt and pepper to taste
Directions
- Preheat your oven to 400 degrees Fahrenheit.
- Take a bowl and mix with salt and black pepper in it.
- Take another bowl and beat eggs until frothy.
- Dip the eggplant pieces into eggs.
- Then coat them with a flour mixture.
- Add another layer of flour and egg.
- Then, take a baking sheet and grease with coconut oil on top.
- Bake for about 15 minutes.
- Serve and enjoy!
