Ingredients

  • 3 grilling vegetables of your choice (e.g., eggplant, zucchini, and onions)
  • 0.5 tsp oregano
  • 0.5 cup of crumbled feta
  • 2 tbsp of olive oil
  • 1 tbsp of balsamic vinegar

Directions

  1. In a grilling pan or in the broiler, cut the veggies into slices, season with oregano and salt/pepper, and cook until done for around 15 minutes.
  2. Combine the olive oil and balsamic vinegar in a small cup or bowl to make a vinaigrette.
  3. Drizzle the vinaigrette over the veggies and top with the crumbled feta pieces and serve
