Ingredients
- 3 grilling vegetables of your choice (e.g., eggplant, zucchini, and onions)
- 0.5 tsp oregano
- 0.5 cup of crumbled feta
- 2 tbsp of olive oil
- 1 tbsp of balsamic vinegar
Directions
- In a grilling pan or in the broiler, cut the veggies into slices, season with oregano and salt/pepper, and cook until done for around 15 minutes.
- Combine the olive oil and balsamic vinegar in a small cup or bowl to make a vinaigrette.
- Drizzle the vinaigrette over the veggies and top with the crumbled feta pieces and serve
