Ingredients
- 3 tablespoons olive oil
- 1 tablespoon butter
- 1.5 tablespoons minced garlic
- 1 cup packed fresh spinach
- 0.5 cup halved cherry tomatoes
- 2 tablespoons chopped fresh basil 1/2 cup sliced black olives
- 3 zucchinis, spiralized
- 0.5 cup shredded Asiago cheese
- Sea salt and freshly ground black pepper, to taste
Directions
- In a nonstick skillet, heat the olive oil and melt the butter over medium-high heat. Add and saute the garlic for 2 minutes or until fragrant.
- Add and saute the spinach, tomatoes, basil, and olives for 4 minutes or until the spinach wilts, then add the spiralized zucchini and toss with a fork to coat well. Scatter with Asiago cheese and cook for 2 minutes or until the zucchini is soft and the c
