- Combine the mustard, olive oil, and garlic salt in a small bowl.
- Take the roast beef, remove excess fat and make small incisions lengthwise so you can let the mixture penetrate more easily.
- Brush the mustard mixture over the beef, making sure it all nicely coated.
- Place on a baking dish and arrange the rosemary leaves on the sides for extra aroma.
- Cook in a preheated oven at 380F/180 C for 50 minutes (for a medium cook inside).
- Serve with mashed sweet potatoes and/or salad
