Beef Zucchini Chips

Ingredients

  • 2 garlic cloves, peeled and minced
  • 1 teaspoon cumin, coconut oil, smoked paprika
  • 1 pound ground beef
  • 0.5 cup onion, chopped
  • Salt and pepper to taste
  • 3 zucchini, sliced lenghtwise, insides scooped out
  • 0.25 cup fresh cilantro, chopped
  • 0.5 cup cheddar cheese, shredded
  • 1.5 cups keto-friendly enchilada sauce
  • Avocado chopped, Green onions chopped, Tomatoes cored and chopped

Directions

  1. Take a pan and place it over medium-high heat
  2. Add oil and heat it up
  3. Add onions and stir cook for 2 minutes
  4. Add beef and stir for a few minutes. Add paprika, salt, pepper, cumin, garlic and stir cook for 2 minutes.
  5. Transfer zucchini halves to baking pan. Stuff each with beef mix, pour enchilada sauce on top. Sprinkle cheddar.
  6. Bake (covered) for 20 minutes at 350-degree F
  7. Uncover and sprinkle cilantro
  8. Bake for 5 minutes more
  9. Sprinkle avocado, green onions, tomatoes on top
  10. Serve and enjoy!
