Ingredients
- 2 garlic cloves, peeled and minced
- 1 teaspoon cumin, coconut oil, smoked paprika
- 1 pound ground beef
- 0.5 cup onion, chopped
- Salt and pepper to taste
- 3 zucchini, sliced lenghtwise, insides scooped out
- 0.25 cup fresh cilantro, chopped
- 0.5 cup cheddar cheese, shredded
- 1.5 cups keto-friendly enchilada sauce
- Avocado chopped, Green onions chopped, Tomatoes cored and chopped
Directions
- Take a pan and place it over medium-high heat
- Add oil and heat it up
- Add onions and stir cook for 2 minutes
- Add beef and stir for a few minutes. Add paprika, salt, pepper, cumin, garlic and stir cook for 2 minutes.
- Transfer zucchini halves to baking pan. Stuff each with beef mix, pour enchilada sauce on top. Sprinkle cheddar.
- Bake (covered) for 20 minutes at 350-degree F
- Uncover and sprinkle cilantro
- Bake for 5 minutes more
- Sprinkle avocado, green onions, tomatoes on top
- Serve and enjoy!
