Ingredients

  • 1 cup almond flour
  • Pinch of salt
  • 0.125 teaspoon baking soda
  • 1 whole egg
  • 2 tablespoons coconut oil, melted
  • 0.5 cup coconut milk
  • 0.25 cup fresh blueberries

Directions

  1. Pre-heat your oven to 350 degree F
  2. Line a muffin tin with paper muffin cups
  3. Add almond flour, salt, baking soda to a bowl and mix, keep it on the side
  4. Take another bowl and add egg, coconut oil, coconut milk and mix
  5. Add mix to flour mix and gently combine until incorporated
  6. Mix in blueberries and fill the cupcakes tins with batter
  7. Bake for 20-25 minutes
  8. Enjoy!
