Ingredients
- 1 cup almond flour
- Pinch of salt
- 0.125 teaspoon baking soda
- 1 whole egg
- 2 tablespoons coconut oil, melted
- 0.5 cup coconut milk
- 0.25 cup fresh blueberries
Directions
- Pre-heat your oven to 350 degree F
- Line a muffin tin with paper muffin cups
- Add almond flour, salt, baking soda to a bowl and mix, keep it on the side
- Take another bowl and add egg, coconut oil, coconut milk and mix
- Add mix to flour mix and gently combine until incorporated
- Mix in blueberries and fill the cupcakes tins with batter
- Bake for 20-25 minutes
