Ingredients

  • 1 tablespoon coconut flour
  • Salt and pepper to taste
  • 1.5 pound pork loin
  • Pinch of dry mustard
  • 0.5 teaspoon ginger
  • 2 tablespoons stevia
  • 0.5 cup cranberries
  • 2 garlic cloves, peeled and minced
  • 0.5 lemon, sliced
  • 0.25 cup water

Directions

  1. Take aowl and add ginger, mustard, pepper and flour
  2. Stir well
  3. Add roast and toss well to coat it
  4. Transfer meat to a Slow Cooker and add stevia, cranberries, garlic, water, lemon slices
  5. Place lid and cook on LOW for 8 hours
  6. Drizzle the pan juice on top and serve!
