  1. Take a pot and place it over medium heat
  2. Add oil and let it heat up
  3. Add onion and stir cook for 3 minutes
  4. Add Brussels sprouts and stir, cook for 2 minutes
  5. Add stock and black pepper, stir and bring to a simmer
  6. Cook for 20 minutes more
  7. Use an immersion blender to make the soup creamy
  8. Add coconut cream and stir well
  9. Ladle into soup bowls and serve
