Ingredients
- 2 tablespoons olive oil
- 1 yellow onion, chopped
- 2 pounds Brussels sprouts, trimmed and halved
- 4 cups chicken stock
- 0.25 cup coconut cream
Directions
- Take a pot and place it over medium heat
- Add oil and let it heat up
- Add onion and stir cook for 3 minutes
- Add Brussels sprouts and stir, cook for 2 minutes
- Add stock and black pepper, stir and bring to a simmer
- Cook for 20 minutes more
- Use an immersion blender to make the soup creamy
- Add coconut cream and stir well
- Ladle into soup bowls and serve
- Enjoy!
