Ingredients

  • 16 oz raw spinach
  • 0.5 cup chopped white onion
  • 0.5 cup chopped shallot
  • 0.5 pound raw bacon slices
  • 2 tbsp butter

Directions

  1. Slice the bacon strips into small narrow pieces.
  2. In a skillet, heat the butter and add the chopped onion, shallots, and bacon.
  3. Saute for 15-20 minutes or until the onions start to caramelize and the bacon is cooked.
  4. Add the spinach and saute on medium heat. Stir frequently to ensure the leaves touch the skillet while cooking.
  5. Cover and steam for around 5 minutes, stir and continue until wilted.
  6. Serve!
