Ingredients

  • 1 cup full –fat cottage cheese
  • 0.5 cup full fat ricotta cheese
  • 2 whole eggs
  • 0.25 cup coconut cream
  • 0.5 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Butter for frying
  • 2 teaspoon almond butter

Directions

  1. Add cottage cheese, ricotta cheese, eggs, coconut cream to a bowl, whisk well
  2. Add ground almond, coconut flour, baking powder, vanilla extra and whisk until smooth
  3. Take a non-stick frying pan and place it over medium heat
  4. Add a knob of butter
  5. Once butter melts, add dollops of batter onto hot pan
  6. Once bubbles appear, flip the pancakes over
  7. Serve with almond butter and some berries on top
  8. Enjoy!
