Ingredients
- 1 cup full –fat cottage cheese
- 0.5 cup full fat ricotta cheese
- 2 whole eggs
- 0.25 cup coconut cream
- 0.5 teaspoon baking powder
- 1 teaspoon vanilla extract
- Butter for frying
- 2 teaspoon almond butter
Directions
- Add cottage cheese, ricotta cheese, eggs, coconut cream to a bowl, whisk well
- Add ground almond, coconut flour, baking powder, vanilla extra and whisk until smooth
- Take a non-stick frying pan and place it over medium heat
- Add a knob of butter
- Once butter melts, add dollops of batter onto hot pan
- Once bubbles appear, flip the pancakes over
- Serve with almond butter and some berries on top
- Enjoy!
