Ingredients

  • 6 ounces halibut fillets
  • 1 tablespoon Greek seasoning
  • 1 large tomato, chopped
  • 1 onion, chopped
  • 5 ounces kalamata olives, pitted
  • 0.25 cup capers
  • 0.25 cup olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper as needed

Directions

  1. Pre-heat your oven to 350 degree Fahrenheit
  2. Transfer the halibut fillets on a large aluminum foil
  3. Season with Greek seasoning
  4. Take a bowl and add tomato, onion, olives, olive oil, capers, pepper, lemon juice and salt
  5. Mix well and spoon the tomato mix over the halibut
  6. Seal the edges and fold to make a packet
  7. Place the packet on a baking sheet and bake in your oven for 30-40 minutes
  8. Serve once the fish flakes off and enjoy!
