Beef Packed Zucchini Boats

Ingredients

  • 1 lb of ground beef with around 80% meat and 20% fat ratio
  • 1 cup of red Mexican salsa
  • 4 medium zucchinis
  • 0.5 shredded cheddar cheese
  • 1 tbsp of olive oil

Directions

  1. Take the zucchinis, cut in half lengthwise, and scoop out the middle flesh inside (leaving enough flesh to make a boat on the sides). Take a form and pinch the insides slightly
  2. Heat the pan with olive oil and add the ground beef.
  3. SautƩ for 7-8 minutes or until most of the juices have evaporated.
  4. Add the salsa and cook for another couple of minutes
  5. Distribute the ground beef and salsa over the zucchini boats
  6. Sprinkle with the cheese on top of each.
  7. Bake in the oven for 15 minutes and serve
