- Take the zucchinis, cut in half lengthwise, and scoop out the middle flesh inside (leaving enough flesh to make a boat on the sides). Take a form and pinch the insides slightly
- Heat the pan with olive oil and add the ground beef.
- SautƩ for 7-8 minutes or until most of the juices have evaporated.
- Add the salsa and cook for another couple of minutes
- Distribute the ground beef and salsa over the zucchini boats
- Sprinkle with the cheese on top of each.
- Bake in the oven for 15 minutes and serve
