Ingredients
- 4 chicken breast halves, cut into bite sized pieces
- 1 pound mushrooms, sliced (5-6 cups)
- 1 bunch spring onion, chopped
- 4 tablespoons olive oil
- 1 teaspoon thyme
- Salt and pepper as needed
Directions
- Take a large deep frying pan and place it over medium-high heat
- Add oil and let it heat up
- Add chicken and cook for 4-5 minutes per side until slightly browned
- Add spring onions and mushrooms, season with salt and pepper according to your taste
- Stir
- Cover with lid and bring the mix to a boil
- Lower heat and simmer for 25 minutes
- Serve!
