Curious Roasted Garlic Soup

Ingredients
- 1 tablespoons olive oil
- 2 bulbs garlic, peeled
- 3 shallots, chopped
- 1 large head cauliflower, chopped
- 6 cups vegetable broth
- Salt and pepper to taste
Directions
- Pre-heat your oven to 400 degree F
- Slice ¼ inch top of garlic bulb and place it in an aluminum foil
- Grease with olive oil and roast in oven for 35 minutes
- Squeeze flesh out of the roasted garlic
- Heat oil in saucepan and add shallots, Saute for 6 minutes
- Add garlic and remaining ingredients
- Cover pan and lower down heat to low
- Let it cook for 15-20 minutes
- Use an immersion blender to puree the mixture
- Season soup with salt and pepper. Serve and enjoy!
