Ingredients

  • 2 8-ounces packages of cream cheese
  • 0.5 cup Erythritol
  • 2 organic eggs
  • 0.5 teaspoon organic vanilla extract
  • 1 teaspoon ground cinnamon

Directions

  1. Preheat the oven to 350 degrees F. Grease 10 cups of a muffin tin.
  2. In a bowl, add the cream cheese, Erythritol, eggs, and vanilla extract and beat until smooth.
  3. Transfer mixture evenly into the prepared muffin cups and then sprinkle each with cinnamon.
  4. Bake for about 20 minutes or until a wooden skewer inserted in the center comes out clean.
  5. Remove the muffin tin from the oven and place it onto a wire rack to cool for about 10 minutes.
  6. Carefully invert the muffins onto a wire rack to cool completely.
  7. Serve
