Ingredients

  • 3 cups mushrooms, sliced
  • 1 medium-large zucchini, sliced
  • 1 cup baby spinach leaves
  • 5 eggs, lightly beaten
  • Salt and pepper to taste
  • 5 ounces cream cheese, broken into little pieces

Directions

  1. Pre-heat your oven to 375 degree F
  2. Grease 12 hole-muffin tin
  3. Place mushrooms, zucchini, spinach, eggs, salt and pepper to a bowl
  4. Mix well
  5. Pour mix into muffin pan and transfer to oven
  6. Bake for 12-15 minutes
  7. Make cream cheese frosting by stirring cream cheese to loosen it and bring to a spreadable consistency
  8. Let the muffin cool and spread cream cheese
  9. Enjoy!
