Healthy Lamb Stew

Ingredients

  • 1 onion, peeled and chopped
  • 3 carrots, peeled and chopped
  • 2 pounds lamb, cubed
  • 1 tomato, cored and chopped
  • 1 garlic clove, peeled and minced
  • 2 tablespoons butter
  • 1 cup beef stock and white wine
  • Salt and pepper to taste
  • 2 rosemary sprigs
  • 1 teaspoon fresh thyme, chopped

Directions

  1. Heat up Dutch oven over medium-high heat
  2. Add oil and let it heat up
  3. Add lamb, salt, pepper and brown all sides
  4. Transfer to plate
  5. Add onion to Dutch oven and cook for 2 minutes
  6. Add carrots, tomato, garlic, butter stick, wine, salt, pepper, rosemary, thyem and stir for a few minutes
  7. Return lamb to Dutch Oven and cook for4 hours
  8. Discard rosemary sprits
  9. Add more salt, pepper and stir
  10. Divide between bowls. Serve and enjoy!
