Healthy Slow-Cooker Lamb Leg

Ingredients

  • 2 pounds lamb leg
  • Salt and pepper to taste
  • 1 tablespoon vanilla bean extract
  • 2 tablespoons mustard
  • 0.25 cup olive oil
  • thyme sprigs
  • 4 mint leaves
  • 6 teaspoon garlic, minced
  • 1 Pinch of dried rosemary

Directions

  1. Add oil to your Slow Cooker
  2. Add lamb, salt, pepper, vanilla bean extract, mustard, rosemary, garlic to your Slow Cooker and rub the mixture well
  3. Place lid and cook on LOW for 7 hours
  4. Add mint and thyme
  5. Cook for 1 hour more
  6. Let it cool and slice
  7. Serve with pan juices
  8. Enjoy!
