Ingenious Eggplant Soup

Ingredients

  • 1 large eggplant, washed and cubed
  • 1 tomato, seeded and chopped
  • 1 small onion, diced
  • 2 tablespoons parsley, chopped
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons distilled white vinegar
  • 0.5 cup parmesan cheese, crumbled
  • Salt as needed

Directions

  1. Pre-heat your outdoor grill to medium-high
  2. Pierce the eggplant a few times using a knife/fork
  3. Cook the eggplants on your grill for about 15 minutes until they are charred
  4. Keep it on the side and allow them to cool
  5. Remove the skin from the eggplant and dice the pulp
  6. Transfer the pulp to mixing bowl and add parsley, onion, tomato, olive oil, feta cheese and vinegar
  7. Mix well and chill for 1 hour
  8. Season with salt and enjoy
