Ingredients
- 4 pork chops
- 1 tablespoons fresh oregano, chopped
- 2 garlic cloves, peeled and minced
- 1 tablespoon canola oil
- 15 ounces canned tomatoes, diced
- 1 tablespoon tomato paste
- Salt and pepper to taste
- 0.25 cup tomato juice
Directions
- Heat up pan with oil over medium-high heat
- Add pork chops, season with salt and pepper
- Cook for 3 minutes; Flip and cook for 3 minutes more
- Return the pan to medium heat
- Add garlic and stir cook for 10 seconds
- Add tomato juice, tomato paste and tomatoes, bring to a boil and lower heat to medium-low
- Add pork chops , stir and cover pan
- Simmer for 30 minutes
- Transfer chops to platter and add oregano to pan, stir cook for 2 minutes
- Pour over pork chops; Serve and enjoy!
