Juicy Glazed Beef Meatloaf

Ingredients

  • 1 cup white mushrooms, chopped
  • 3 pounds ground beef
  • 2 tablespoons fresh parsley, chopped
  • 2 garlic cloves, peeled and minced
  • 0.5 cup onion chopped and almond flour
  • 0.25 cup red bell pepper, seeded and chopped
  • 0.33 cup parmesan cheese, grated
  • 3 whole eggs
  • Salt and pepper to taste
  • 1 teaspoon balsamic vinegar

Directions

  1. Take a bowl and add beef, salt, pepper, mushrooms, garlic, onion, bell pepper, parsley, almond flour , cheese, 1 teaspoon vinegar, salt, pepper, eggs and stir well
  2. Transfer mixture to loaf pan and bake for 30 minutes at 375 degree F
  3. Take a small pan and heat over medium heat
  4. Add ketchup, swerve, 2 cups vinegar and stir cook for 20 minutes
  5. Take meatloaf out of oven and spread glaze over meatloaf
  6. Place in oven and bake for 20 minutes more
  7. Let it cool, slice and serve!
