Juicy Glazed Beef Meatloaf

Ingredients
- 1 cup white mushrooms, chopped
- 3 pounds ground beef
- 2 tablespoons fresh parsley, chopped
- 2 garlic cloves, peeled and minced
- 0.5 cup onion chopped and almond flour
- 0.25 cup red bell pepper, seeded and chopped
- 0.33 cup parmesan cheese, grated
- 3 whole eggs
- Salt and pepper to taste
- 1 teaspoon balsamic vinegar
Directions
- Take a bowl and add beef, salt, pepper, mushrooms, garlic, onion, bell pepper, parsley, almond flour , cheese, 1 teaspoon vinegar, salt, pepper, eggs and stir well
- Transfer mixture to loaf pan and bake for 30 minutes at 375 degree F
- Take a small pan and heat over medium heat
- Add ketchup, swerve, 2 cups vinegar and stir cook for 20 minutes
- Take meatloaf out of oven and spread glaze over meatloaf
- Place in oven and bake for 20 minutes more
- Let it cool, slice and serve!
