Ingredients

  • 0.5 cup Erythritol
  • 1 teaspoon vanilla extract
  • 2.5 cups almond flour
  • 6 tablespoons butter

Directions

  1. Pre-heat your oven to 350 degrees F.
  2. Line cookie sheet with parchment paper
  3. Take a bowl and beat in butter, Erythritol and mix until it is fluffy.
  4. Beat in vanilla extract, beat in almond flour ½ cup at a time.
  5. Use a tablespoon to transfer the dough to a cookie sheet.
  6. Flatten each cookie to about 1/3 inch thick.
  7. Bake for 12-15 minutes until golden.
  8. Let them cool and serve
