Directions

  1. Take a large skillet and place it over medium heat
  2. Add a tablespoon olive oil
  3. Add mushrooms to pan and Saute for 3 minutes
  4. Take a medium bowl and massage kale with remaining 1 tablespoon olive oil (for about 1-2 minutes)
  5. Add kale to skillet and place them on top of mushrooms
  6. Place slices of avocado on top of kale
  7. Create 4 wells for eggs and crack each egg onto each hold
  8. Season eggs with salt and pepper
  9. Cover skillet and cook for 5 minutes
  10. Serve hot!
