Stuffed Parmesan Cheese Avocado

Ingredients

  • 1 whole avocado
  • 1 tablespoon chipotle sauce
  • 1 tablespoon lime juice
  • 0.25 cup parmesan cheese
  • Salt and pepper to taste

Directions

  1. Prepare avocado by slicing half lengthwise and discard the seed.
  2. Gently prick the skin of the avocado with a fork.
  3. Set your avocado halves, skin down on the small baking sheet lined with aluminum foil.
  4. Top with sauce and drizzle lime juice.
  5. Season with salt and pepper.
  6. Sprinkle half parmesan cheese in each cavity, set your broiler to high for 2 minutes.
  7. Add rest of the cheese and return to your broiler until cheese melts and avocado slightly browns.
  8. Serve hot and enjoy!
