Ingredients
- 2 lb chicken (4 breasts)
- 1 packet curry paste
- 3 tbsp ghee (can substitute with butter)
- 0.5 cup heavy cream
- 1 head cauliflower (around 1 kg/2.2 lb)
Directions
- Melt the ghee in a pot. Mix in the curry paste.
- Add the water and simmer for 5 minutes.
- Add the chicken, cover, and simmer on medium heat for 20 minutes or until the chicken is cooked.
- Shred the cauliflower florets in a food processor to resemble rice.
- Once the chicken is cooked, uncover, and incorporate the cream.
- Cook for 7 minutes and serve over the cauliflower
