Cauliflower Rice And Chicken Curry

Ingredients

  • 2 lb chicken (4 breasts)
  • 1 packet curry paste
  • 3 tbsp ghee (can substitute with butter)
  • 0.5 cup heavy cream
  • 1 head cauliflower (around 1 kg/2.2 lb)

Directions

  1. Melt the ghee in a pot. Mix in the curry paste.
  2. Add the water and simmer for 5 minutes.
  3. Add the chicken, cover, and simmer on medium heat for 20 minutes or until the chicken is cooked.
  4. Shred the cauliflower florets in a food processor to resemble rice.
  5. Once the chicken is cooked, uncover, and incorporate the cream.
  6. Cook for 7 minutes and serve over the cauliflower
