Ingredients
- 4 medium mushrooms, sliced, 2 oz
- 1 green onion, sliced
- 2 eggs, beaten
- 1 oz Jarlsberg or Swiss cheese, shredded 1 oz ham, diced
Directions
- In a skillet, cook the mushrooms and green onion until tender.
- Add the eggs and mix well.
- Sprinkle with salt and top with the mushroom mixture, cheese, and ham.
- When the egg is set, fold the plain side of the omelet on the filled side.
- Turn off the heat and let it stand until the cheese has melted.
- Serve!
