Ingredients

  • 2 tablespoons garlic, minced
  • 4 cups english cucumbers, peeled and diced
  • 0.5 cup onions, diced
  • 1 tablespoon lemon juice
  • 1.5 cups vegetable broth
  • 0.5 teaspoon salt
  • 0.25 teaspoon red pepper flakes
  • 0.25 cup parsley, diced
  • 0.5 cup Greek yogurt, plain

Directions

  1. Add the listed ingredients to blender and emulsify by blend them (except ½ cup of chopped cucumbers)
  2. Blend until smooth
  3. Divide the soup amongst 4 servings and top with extra cucumbers and chili/pepper flakes if you want
  4. Enjoy chilled!
