Ingredients
- 4 cups vegetable stock
- 1 pound cauliflower, trimmed and chopped
- 7 ounces cream cheese
- 4 ounces butter
- Salt and pepper to taste
Directions
- Take a skillet and place it over medium heat
- Add butter and melt
- Add cauliflower and Saute for 2 minutes
- Add stock and bring mix to a boil
- Cook until Cauliflower are Al-Dente
- Stir in cream cheese, salt and pepper
- Puree the mix using immersion blender
- Serve and enjoy!
