Ingredients

  • 2 tablespoons olive oil
  • 1 large-sized leek, chopped
  • 2 cloves garlic, minced
  • 2 pounds turkey thighs, skinless, boneless, and chopped
  • 2 celery stalks, chopped

Directions

  1. Heat the olive oil in a soup pot over a moderate flame. Then, sweat the leeks until just tender and fragrant.
  2. Then, cook the garlic until aromatic
  3. Add in the turkey thighs and celery; add 4 cups of water and bring to a boil. Immediately reduce the heat and allow it to simmer for 35 to 40 minutes.
  4. Ladle into individual bowls and serve hot.
