Ingredients

  • 4 oz roast beef deli slices, torn apart
  • 3 tbsp sour cream
  • 1 small zucchini, chopped
  • 2 tbsp chopped green chilies
  • 3 oz shredded cheddar cheese

Directions

  1. Divide the beef slices at the bottom of 2 wide mugs and spread 1 tbsp of sour cream.
  2. Top with 2 zucchini slices, season with salt and pepper, add green chilies, top with the remaining sour cream, and then cheddar cheese.
  3. Place the mugs in the microwave for 1-2 minutes until the cheese melts.
  4. Remove the mugs, let cool for 1 minute, and serve.
